Cliff Leir is the founder, owner, and head baker at Fol Epi, the artisan bakery at Dockside Green.

To call him passionate about baking would be an understatement.

He is intimately familiar with the process behind his many products. From grinding wheat and culturing wild yeast, to experimenting with new products and working with his staff. He built his first wood-fired oven when he was still a teenager.

Cliff is a consummate craftsman, hands-on innovator, cherished citizen of Victoria, and one of the finest representatives of the ethos and approach that drives Dockside Green.
